葡萄品種：100% Cabernet Franc

釀造：果實採收後，創新地採用被稱為「Baie-Par-Baie」的逐粒修梗極致方式，保留含梗與去梗各自的優點，透過人工方式，將整串採收下來的葡萄拿在手中，用工具一顆一顆剪下來，保留連接著果實的細梗，除去較粗的部分，既能避免果梗可能有缺陷的單寧，又可以確保果實完美不受損。這種作法需耗費龐大的人力投入。在村莊級的酒款，最高會使用到40%以上的逐粒修梗，再混合整串與一般去梗的葡萄一起進行發酵釀造；一級園與特級園更會用到50%以上的逐粒修梗。偏好不使用新橡木桶，避免新橡木桶的風味掩蓋葡萄園本身清晰的風味特色與鮮活的生命力。
